Frozen Peach Bellini
- 1 bottle Prosecco
- 2 ounces cherry herring
- 4 ounces peach puree
- 1 cup peaches, diced small and frozen (about 4 peaches)
- 6 fresh peach slices
- In a carafe, combine the Prosecco and peach puree.
- Divide the cherry herring along with the frozen peaches between six champagne glasses, and divide the drink between them to top.
- Garnish with fresh peach slices.
