Soy-Sesame Bok Choy Rolls

  1. Trim stems from bok choy leaves.
  2. Finely chop stems, and toss in bowl with tofu cubes, carrots, green onions, and teriyaki sauce.
  3. Place 1 bok choy leaf on work surface with stem end closest to you.
  4. Spoon 2 Tbs.
  5. tofu mixture in cup of leaf near tip end.
  6. Roll leaf around filling like a burrito, folding in sides.
  7. Secure with toothpick.
  8. Repeat with remaining ingredients.
