Dave'S Chili
- 2 lb. ground round or chuck
- 1 medium onion, chopped fine
- 1/4 tsp. garlic powder
- 1 lb. tomatoes, diced
- 2 Tbsp. chili powder
- 1/2 tsp. ground cumin
- 1 1/2 tsp. salt
- 1 tsp. sugar
- 1 tsp. black pepper
- 4 c. tomato juice
- 1/2 tsp. red pepper sauce (optional)
- 2 cans light red kidney beans, drained
- 1 1/2 Tbsp. masa flour or cornstarch
- Cook ground beef, onion and garlic powder until beef is light brown and onion is tender; drain.
- Add tomatoes, chili powder, cumin, salt, sugar, pepper, tomato juice and red pepper sauce, if desired.
- Heat to boiling; reduce heat.
- Cover and simmer 1 hour, stirring occasionally.
- Stir in beans.
- Heat to boiling.
- For thicker chili add Masa flour or cornstarch and stir well.
- Reduce heat; simmer for an additional 15 minutes.
- Serve with shredded Cheddar or Colby Jack cheese.
