Chicken And Chilies
- 12 oz. cubed, boneless, skinless chicken breasts
- 1/2 tsp. ground black pepper
- 1/4 tsp. salt (optional)
- 2 tsp. olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 c. defatted reduced sodium chicken broth
- 1 (8 oz.) can reduced sodium tomato sauce
- 1 (15 oz.) can black beans, rinsed and drained
- 1 (4 1/2 oz.) can chopped mild green chili peppers
- 1 tsp. chili powder
- 1/2 tsp. ground cumin
- 1 to 2 tsp. sugar (optional)
- 3 c. hot cooked rice
- Chopped green chili peppers and black beans turn this chicken skillet dinner into a South of the Border fiesta!
- A tossed salad is a perfect accompaniment.
