Rainy Day Chili
- 1 (29 ounce) canwhole pinto beans
- 1 cup margarine
- 2 medium onions
- 6 shallots, chopped fine
- 1 (7 ounce) can green chilies
- 2 garlic cloves
- 3 lbs ground beef
- 1 lb pork sausage (optional)
- 2 tablespoons flour
- 1 lb baked beans
- 1 (4 ounce) can pimientos
- 3 (15 ounce) cans diced tomatoes
- 34 cup chopped celery
- 12 lb fresh sliced mushrooms
- 12 cup sweet red pepper
- 1 (9 ounce) can black olives
- 13 cup parsley
- 1 (12 ounce) bottle chili sauce
- 1 tablespoon salt
- 2 teaspoons pepper
- 1 tablespoon oregano
- 2 -4 teaspoons chili powder
- 1 tablespoon coriander
- Melt margarine in kettle or dutch oven.
- Add chopped onion, shallots, chilis and garlic.
- Saute until onion is soft.
- Brown meats and add to vegetables and garlic mixture.
- Sprinkle in flour and stir.
- Add all other ingredients.
- Stir well.
- Simmer 1 and 1/4 hours, stirring every 15 minutes.
