Easy Spicy Chicken Soup
- 3 tbsp olive oil, extra virgin
- 1 large onion
- 3 large carrots
- 3 piece celery
- 3 small parsnips
- 2 jalapenos
- 1 tbsp Italian Seasoning
- 1 tbsp dried cilantro
- 8 cup plus or minus chicken stock
- 20 oz pre cooked chicken meat
- 3 small Mexican summer squash
- Chop and dice parsnips, carrots, celery, onion and jalapenos.
- Add them to a pot with olive oil.
- Add seasoning and saute until half cooked.
- While the vegetables are cooking chop and dice, the chicken and Summer squash.
- Add 6 cups of stock, the Summer squash and chicken.
- If you need more broth add what you need.
- Heat until hot.
