Chicken-Cheese Crepes
- 6 Tbsp. butter or margarine
- 1/3 c. all-purpose flour
- dash of salt (optional)
- 2 c. milk
- 1 c. water
- 1 Tbsp. instant bouillon granules (chicken)
- 1/2 c. shredded Swiss cheese
- 2 Tbsp. parsley
- hot pepper sauce
- 1 c. mushrooms, sliced
- 1 (10 oz.) pkg. frozen peas
- 2 c. cooked chicken or turkey, chopped
- 3 Tbsp. pimiento, chopped
- 12 crepes
- Cheese Sauce:
- Melt butter; stir in flour and salt.
- Add milk, water and chicken granules all at once.
- Cook and stir on medium heat until thick and bubbling.
- Cook 1 to 2 minutes more.
- Stir in cheese, parsley and pepper sauce (to taste).
- Remove 1 cup of sauce mix; set aside.
- Stir mushrooms into sauce.
