Mint Sauce

  1. Combine 1 cup mint, shallots, vinegar and sugar in heavy small nonaluminum saucepan.
  2. Stir over medium heat until sugar dissolves.
  3. Simmer 2 minutes.
  4. Remove from heat.
  5. Cover and let stand 2 hours.
  6. Strain sauce into large glass measuring cup.
  7. Place cornstarch in same saucepan.
  8. Gradually whisk is sauce.
  9. Bring to simmer over medium heat, stirring constantly.
  10. Stir until sauce thickens slightly and turns translucent, about 2 minutes.
  11. Remove from heat.
  12. Cool to room temperature.
  13. (Can be prepared 1 day ahead.
  14. Cover and refrigerate.
  15. Bring to room temperature before continuing.)
  16. Stir in remaining 2 tablespoons mint.
  17. Season to taste with salt and pepper.
