Pitas
- 3 cups unbleached all-purpose flour
- 1 teaspoon salt
- 12 tablespoon sugar
- 2 teaspoons activedry yeast
- 1 14 cups water
- 1 tablespoon extra virgin olive oil
- Mix together.
- Knead 10 minute.
- put in oiled bowl and cover with damp towel 90 minute.
- Punch down and break into 8 pieces.
- Cover and let sit 10 minute.
- flatten
- bake at 400 for 3 minute.
- for more crispy bake extra 3 minute.
