Pecan Ice Cream Dessert Recipe
- 1/2 c. butter, melted
- 60 Ritz crackers, rolled fine
- 2 sm. pkg. instant coconut pudding mix
- 1 1/2 c. lowfat milk
- 1 quart. pecan ice cream, soft
- 1 (19 ounce.) Cold Whip
- Fold in 9 x 13 inch pan butter with Ritz crackers.
- Spread 1/2 of mix on bottom.
- Save 1/2 for top.
- Mix pudding with lowfat milk.
- Beat 2 min.
- Add in ice cream to pudding and spread on crumbs.
- Spread Cold Whip on top.
- Finish with remaining crumbs.
- Chill overnight.
- Any kind of nut ice cream may be used.
