Lemon Lime Bars
- 1 cup unsalted butter, room temperature
- 12 cup granulated sugar
- 2 cups all-purpose flour
- 14 teaspoon salt
- 4 extra-large eggs, room temperature
- 1 23 cups granulated sugar
- 1 tablespoon grated lemon zest (1-2 lemons)
- 12 tablespoon grated lime zest (1-2 limes)
- 23 cup freshly squeezed lemon juice
- 23 cup all-purpose flour
- Line a 9x13 pan with foil, leaving an overhang around the edges.
- Spray the foil.
- Prepare the crust: Cream the butter and sugar until light.
- Combine the flour and salt.
- Add to the butter mixture until just mixed.
- Dump onto a well-floured board and gather into a ball.
- Flatten the dough and press it into the prepared pan, covering the bottom and a 1/2-inch edge on all sides.
- Chill for 30 minutes.
- Preheat oven to 350F Bake the crust for 15-20 minutes, until very lightly browned.
- Allow to cool on a wire rack, leaving the oven on.
- Prepare the filling: Whisk together the eggs, sugar, zests, juice, and flour.
- Pour into the crust and bake for 20-25 minutes, until the filling is set.
- Let cool to room temperature.
