A Better Chicken Casserole
- 4 chicken breasts, cooked
- 2 lb. broccoli
- 3 (10 1/2 oz.) cans cream of chicken soup
- 1/2 tsp. curry powder
- 1 tsp. lemon juice
- 1 Tbsp. butter
- 1 c. seasoned bread crumbs
- 1/4 lb. fresh mushrooms
- 1/2 c. sharp cheese
- 1 c. mayonnaise
- Cook chicken in boiling water until tender.
- Steam broccoli until tender.
- Mix soup, curry powder, lemon juice and mayonnaise with sliced mushrooms.
- Spread cut-up broccoli in bottom of well-greased 9 x 13-inch pan.
- Remove bones from chicken and cut up into 1-inch pieces; spread over broccoli.
- Pour soup mixture over all and cover with cheese.
- Sprinkle with bread crumbs combined with butter.
- Bake at 350u0b0 for 45 minutes.
- Can be assembled in advance.
- Just refrigerate and then bake.
