Low-Fat Granola
- 2 1/2 c. rolled oats
- 1/2 c. slivered almonds
- 1/2 c. toasted wheat germ
- 1/4 c. honey
- 1/3 c. frozen apple juice concentrate
- 1/4 c. raisins
- 1/2 c. dried fruit, chopped
- vegetable cooking spray
- Preheat oven to 300u0b0.
- In large mixing bowl, combine oats, almonds and wheat germ.
- Mix the honey and apple juice together and pour over oat mixture.
- Stir oat mixture until coated.
- Spray a 9 x 13-inch baking pan with vegetable cooking spray.
- Spread oat mixture evenly in pan.
- Bake 45 to 50 minutes or until brown. Stir every 15 minutes.
- Remove from oven.
- Stir in raisins and dried fruit.
- Transfer mixture to another pan and cool.
- Store in airtight container.
- Makes 10 (1/2 cup) servings.
