Herbed Pork Roast
- 1 cup soy sauce
- 2 tlbs. lemon juice
- 2 garlic cloves minced
- 2 tsps. dried tarragon
- 2 tsps. dries basil
- 1 tsp. dried chives
- 1 teaspoon ground sage
- 1 tsp. pepper
- 1 3 1/2 to 4 lbs. boneless pork loin roast
- In a large oven cooking bag or resealable bag combine the first eight ingredients.
- Add roast, seal and turn to coat.
- Place bag in a shallow roasting pan.
- Refrigerate over night, turning bag several times.
- If using a cooking bag, make several slits in top of bag.
- If not remove roast from plastic bag and place in roasting pan.
- Pour marinade over roast, cover pan and bake at 350 degrees for about 2 to 2 1/2 hours
- or until thermometer reads 160 degrees.
- Serves 6 to 8.
- I leave mine in the frig for a couple of days it increases the flavor.
