Cinnamon Sugar Cookies
- 1 c. butter (margarine)
- 1 c. sugar
- 1 c. confectioners sugar
- 1 c. vegetable oil
- 2 eggs
- 1 tsp. vanilla extract
- 4 1/3 c. all-purpose flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1 tsp. cream of tartar
- 1 c. finely chopped pecans (optional)
- colored sugar (optional)
- In a large mixing bowl, cream the butter, sugars and oil.
- Add eggs and vanilla; mix well.
- Add flour, salt, baking soda, cinnamon and cream of tartar.
- Stir in the pecans (if desired). Roll into 1-inch balls.
- Place on greased cookie sheet; flatten with the bottom of a glass dipped in sugar.
- Sprinkle with colored sugar (if desired).
- Bake at 375u0b0 for 10 to 12 minutes.
- Yield:
- 8 dozen.
