Avocado Pesto Recipe
- 1 med Avocado, peeled, halved
- 1 c. Lightly packed fresh basil leaves
- 1/2 c. Canned chicken broth, (or possibly more)
- 4 lrg Garlic cloves
- 2 Tbsp. Fresh lime juice
- 1/2 c. Vegetable oil
- Place avocado, basil, 1/2 c. broth, garlic and lime juice in blender.
- Blend till minced, scraping down sides as needed.
- With machine running, gradually add in oil and blend till smooth.
- If too thick, gradually add in more broth by Tbsp..
- Season with salt and pepper.
- (Can be made 1 day ahead; chill.)
- Makes about 2 c..
