Avocado Pesto Recipe

  1. Place avocado, basil, 1/2 c. broth, garlic and lime juice in blender.
  2. Blend till minced, scraping down sides as needed.
  3. With machine running, gradually add in oil and blend till smooth.
  4. If too thick, gradually add in more broth by Tbsp..
  5. Season with salt and pepper.
  6. (Can be made 1 day ahead; chill.)
  7. Makes about 2 c..
