Chicken Peanut Stew

  1. Spray 6-quart saucepot with nonstick cooking spray.
  2. Pat dry chicken breasts, cut into 1-inch pieces, and sprinkle with salt.
  3. Heat pot on medium-high; add chicken to pot.
  4. Cook 3 to 4 minutes or until browned all over, turning.
  5. Add pumpkin, tomatoes, peanut butter, water, and ground coriander.
  6. Break up tomatoes with spoon.
  7. Heat to boiling on high.
  8. Reduce heat to medium; simmer 5 minutes or until chicken is no longer pink in center.
