Tropical Banana Muffins

  1. Heat oven to 375F.
  2. Place paper baking cups into 12 muffin pan cups; set aside.
  3. Combine flour, baking powder, baking soda, salt, cinnamon and ginger in bowl; set aside.
  4. Combine brown sugar and butter in another bowl; beat at medium-high speed until smooth.
  5. Add bananas, eggs, lime juice and lime zest.
  6. Beat at medium speed, scraping bowl often, until smooth.
  7. Stir flour mixture until well mixed.
  8. Spoon batter into prepared muffin pan cups; sprinkle tops with coconut.
  9. Bake 22-27 minutes or until toothpick inserted in center comes out clean.
  10. Remove from pan to cooling rack; cool completely.
