Tropical Banana Muffins
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 3/4 cup firmly packed brown sugar
- 1/2 cup Land O Lakes Butter, softened
- 2 medium (1 cup) ripe bananas, mashed
- 2 Land O Lakes Eggs
- 1 tablespoon lime juice
- 1 teaspoon freshly grated lime zest
- 1/3 cup sweetened flaked coconut
- Heat oven to 375F.
- Place paper baking cups into 12 muffin pan cups; set aside.
- Combine flour, baking powder, baking soda, salt, cinnamon and ginger in bowl; set aside.
- Combine brown sugar and butter in another bowl; beat at medium-high speed until smooth.
- Add bananas, eggs, lime juice and lime zest.
- Beat at medium speed, scraping bowl often, until smooth.
- Stir flour mixture until well mixed.
- Spoon batter into prepared muffin pan cups; sprinkle tops with coconut.
- Bake 22-27 minutes or until toothpick inserted in center comes out clean.
- Remove from pan to cooling rack; cool completely.
