Croque Monsieur With Cucumber Salad
- 1/4 cup white wine vinegar
- 1 teaspoon sugar
- 1/4 cup olive oil
- 1 cucumber diced
- 1 red onion peeled and cut into thin rings
- 8 slices cooked ham
- 8 slices gruyere cheese
- 8 slices white bread
- 2 eggs
- 1/2 cup milk
- 2 teaspoons butter
- For the cucumber salad, mix the vinegar and sugar in a medium bowl. Whisk in the oil in a thin stream. Add the cucumber and onion; toss. Season with salt and pepper. Refrigerate until ready to serve.
- For the croque monsieur, place 2 slices each ham and cheese on 4 slices of bread. Top with the remaining bread. Beat the eggs and milk in a shallow dish. Season with salt and pepper. Dip the sandwiches in the egg mixture to lightly coat both sides.
- Melt 1 tsp of the butter in a large nonstick skillet on medium heat. Cook 2 sandwiches for 2-3 mins on each side, until golden brown. Remove and repeat with the remaining butter and sandwiches. Cut in half diagonally and serve with the cucumber salad.
