Butternut Squash & Goat Cheese Appetizers
- 6 tablespoons I Can't Believe It's Not Butter!(R) Spread
- 10 ounces butternut squash frozen, cubes
- 1 shallots
- 1 clove garlic finely chopped
- 1 tablespoon water
- 1/4 teaspoon fresh rosemary finely chopped, optional
- 1/2 cup goat cheese
- 1/4 cup figs
- 1 tablespoon firmly packed brown sugar
- 5 11/16 ounces filo shell, mini
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
- Preheat oven to 425u0b0. Spray baking sheet with nonstick cooking spray; set aside.
- Microwave 2 tablespoons I Can't Believe It's Not Butter!(R) Spread, squash, shallot, garlic, water, brown sugar, salt, pepper and rosemary in medium microwave-safe bowl at HIGH 5 minutes or until squash is tender, stirring once halfway through. Mash lightly with fork, then let cool slightly. Fold in goat cheese and figlets. Spoon into phyllo shells. Arrange on prepared sheet. Bake 8 minutes or until heated through.
