Dark Cherry Walnut Rum Cake
- 2 cups all purpose flour
- 3/4 cup cocoa powder
- 1 package chocolate pudding 3.25 oz
- 2 cups white sugar
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 4 eggs
- 1/2 cup canola oil
- 2 teaspoons vanilla
- 1/2 cup cold water
- 1/2 cup brandy or dark rum
- 1/2 cup walnut chopped
- 1/2 cup cherries chopped glazed
- 1 stick butter
- 1/4 cup water
- 1 cup sugar
- 3/4 cup brandy /rum
- Combine and sift flour,cocoa,sugar,baking powder,baking soda and salt
- After sifting,proceed to combine the sifted ingredients and chocolate pudding
- Combine walnut and cherries
- Grease and flour a bundt cake pan.
- Sprinkle chopped cherrywalnut over bottom of pan.
- In a mixer,mix all cake ingredients together.
- Pour batter into pan over next to cherrywalnut.
- Bake at 350 or 160 for 1 hour.Do not over bake!
- Boil for 4 to 5 minutes,stirring constantly.
- Turn off flame and pour in brandy or rum.
- Stir to combine and reheat for 30 seconds.
- Remove cake from oven.
- Immediately drizzle 1/3 of the glaze on the bottom (top) of the cake.
- Allow to sit for five minutes.Invert the cake onto a serving plate.
