Cucumber Mousse

  1. Peel seed and dice cukes.
  2. Sprinkle with 1t salt and sugar.
  3. Let stand 20 minutes.
  4. In a saucepan, combine vinegar and water; sprinkle gelatin on it to soften.
  5. Stir over low heat to dissolve gelatin.
  6. Remove from heat and add remaining salt and mint.
  7. In processor, puree cukes, onion and parsley; add to gelatin mixture.
  8. Chill until slightly thickened.
  9. Beat in sour cream and mayo.
  10. Season with hot sauce.
