Italy Meets India, Pasta With Vegetables And Curry
- 3/4 pound fresh pasta penne or spaghetti
- 1 onion
- 1 zucchini
- 1 carrot
- 2 potatoes
- 1 2/3 cups tomatoes fresh or from a can
- salt 1 tbsp
- pepper
- 1 tablespoon PHILADELPHIA Cream Cheese
- 1 tablespoon curry powder
- olive oil 3tbsp
- chili powder flakes
- Cut the vegetables in very small pieces
- Heat the olive oil and fry the potatoes and onions for a couple of minutes
- Add the carrots and fry for a couple of minutes
- Add the zucchini and fry for a couple of minutesnook the pasta
- Add the tomatoes and cook for 10 minutes
- Season with salt and pepper and curry
- Add the cream cheese and the cooked pasta
- Serve with a little bit of parmeggiano on top and chili if you like
- Enjoy
