Spinach Mushroom Quiche
- 1 frozen deep dish pie crust
- 1 tablespoon dijon mustard
- 2 packages frozen spinach chopped
- 1 garlic clove fresh, chopped
- 1 tablespoon olive oil
- 1 cup shredded cheddar cheese
- 1/2 cup fresh mushrooms sliced
- 1 shallot
- onion
- 1/2 cup whipping cream
- 3 eggs
- ground pepper Fresh
- seasoning salt
- grated Parmesan cheese
- paprika
- Spread inside pie crust with mustard.
- Cook spinach; drain well.
- Saute garlic, shallots and mushrooms until tender in olive oil.
- Stir in spinach and cheese.
- Pour into pie shell.
- Mix eggs, whipping cream and seasonings well.
- Pour over quiche.
- Get liquid down in spinach.
- Sprinkle top with paprika and Parmesan.
- Bake in center of oven at 375 degrees for about 35 minutes, until crust is brown.
- Serves 6 or 8.
