Enxovalhada, Lemon Squares
- margarine to taste
- 2 eggs
- 7 1/8 tablespoons margarine
- 1 tablespoon lard
- 2 1/8 cups milk
- 1 teaspoon baking powder
- 1 3/4 cups sugar
- 1 lemon
- 4 cups flour
- powdered sugar to taste
- cinnamon to taste
- Preheat oven to 180 degrees Celsius.
- Grease a tray or glass baking dish with margarine and set it aside.
- In a bowl, mix the eggs very well, then add the softened margarine, lard, milk, baking powder, sugar, and lemon zest and continue to mix well.
- Once the ingredients are well mixed, add the flour slowly, stirring the mix gently.
- Pour the dough into the greased baking tray and bake for about 25 to 30 minutes.
- Check to see if it is done. Remove it from the oven and let it cool.
- Once cold, sprinkle with a good amount of cinnamon and powdered sugar.
