Greek Capellini
- 6 oz. capellini, uncooked
- 1 lb. fresh broccoli
- vegetable cooking spray
- 1 tsp. olive oil
- 1 clove garlic, minced
- 1/2 c. canned chicken broth
- 2 c. peeled tomato, chopped
- 2 tsp. ripe olives
- 1/4 tsp. black pepper
- 1/2 c. Feta cheese
- 1 tsp. Greek seasoning
- Cook capellini, drain.
- Wash and cut broccoli into small flowerets.
- Coat skillet with vegetable spray; add oil.
- Over medium heat, add garlic; saute 1 minute, add broccoli; saute.
- Stir in broth and Greek seasoning.
- Bring to a boil.
- Stir in tomato and capellini.
- Simmer until heated.
- Add olives and pepper, toss. Transfer to serving bowl; sprinkle with Feta.
- `Contains 3.6 grams fat per serving.
