Apple And Coffee Brownie
- butter for greasing
- 3 apples -4 small
- 1 cup sugar
- 7/8 cup butter at room temperature
- 2 eggs separated
- 3/4 cup flour
- 1 teaspoon baking powder
- 7/8 cup cornflour
- 1 cup coffee strong
- Pre-heat the oven to 170C.
- Grease and line a baking pan, 20 cm x 20 cm.
- Peel and core the apples, cut into slices, and set aside.
- Beat the sugar with the butter until light.
- Add the egg yolks and mix well.
- Add the flour, cornflour, baking powder, and cold coffee and mix all the ingredients together thoroughly.
- Add the apples and mix again.
- Whisk the egg whites until stiff and gently fold into the mixture.
- Transfer to the baking pan and cook for 30-40 minutes or until golden brown and a toothpick inserted in the center comes out clean.
