Gluten-Free Peanut Butter Chocolate Chunk Bars
- 3/4 cup creamy peanut butter
- 6 tablespoons brown rice syrup
- 6 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 cup almond flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 dash cinnamon
- 1 1/2 cups quick-cooking oats
- 4 ounces dark chocolate chunks 65-75%
- Preheat the oven to 350u0b0 F.
- Line an 8x8" square baking pan with parchment paper and set aside.
- Place the peanut butter, brown rice syrup, maple syrup, and vanilla extract in a large mixing bowl. Whisk vigorously until smooth and combined.
- Add the almond flour, baking soda, salt, and cinnamon to the bowl. Stir with a rubber spatula to thoroughly combine. Fold in the oats and chocolate chunks, working until a stiff dough forms.
- Transfer the dough to the baking pan and press it into an even layer.
- Transfer the baking pan to the middle rack of the preheated oven.
- Bake the bars for 20-23 minutes until the edges are slightly golden brown and a toothpick inserted in the center comes out clean.
- Remove the baking pan from the oven.
- Transfer the bars to the refrigerator. Chill for at least 2 hours before slicing and serving.
- Lift the bars out from the pan by pulling up on the edges of the parchment paper. Slice into squares, and serve.
