All-Weather Divinity

  1. In a saucepan, mix sugar, syrup, salt and water.
  2. Place over high heat, stirring frequently.
  3. In mixing bowl, beat egg whites until stiff peaks are formed.
  4. (It is much easier to use a self-standing mixer than a hand-held model.)
  5. Continue cooking syrup mixture until, when dribbled from a spoon into cool water, a thin thread is formed and breaks when pinched.
  6. Turn mixer on and slowly add syrup; be careful not to cook egg whites.
  7. Continue to beat mixture as it cools.
  8. Add vanilla.
  9. Continue beating and add pecans when mixture thickens enough to hold onto a spoon without any dropping.
  10. Using two teaspoons, dip onto wax paper.
  11. Allow to cool.
  12. Makes 50 to 60 pieces.
