Fresh Salsa & Bean Salad
- 2 7/8 cups bean tin of four, mix
- 2 1/8 cups chickpeas tin of
- 2 tomatoes large, deseeded and chopped
- 1 red onion small-medium sized, finely chopped, you can use regular onion but make sure it's not too strong
- 1 handful coriander /cilantro finely chopped
- 2 pieces capsicum /peppers marinated in vinegar and finely chopped
- 5 tablespoons extra-virgin olive oil
- 2 tablespoons apple cider vinegar OR balsamic vinegar
- salt
- Place beans into a strainer and thoroughly rinse under the tap. Set aside to drain.
- In a medium salad bowl add the chopped tomato, chopped onion, finely chopped coriander/cilantro, finely chopped marinated capsicum, your drained beans, extra virgin olive oil, apple cider OR balsamic vinegar, salt and pepper.
- Mix to ensure the ingredients are well combined.
- Taste to ensure the balance of flavor is right and serve.
