Chicken, Sausage And Tomato Stew
- 2 tablespoons oil
- 1 1/3 pounds chicken breast fillets cut into cubes
- 4 3/8 ounces salami skin removed, sliced
- 1 onion peeled and finely diced
- 1 clove garlic peeled and crushed
- 1 1/2 cups orzo pasta
- 7/8 cup whipping cream
- 2 cans plum tomatoes 400g each
- 1 pinch sugar
- 2 3/8 cups artichoke hearts drained and halved
- 1 1/4 cups cherry tomatoes halved
- fresh basil leaves for garnish
- Heat the oil in a large saucepan over medium-high heat. Season the chicken with salt and pepper, then add to the pan and stir-fry until browned all over. Add the sausage, onion and garlic and cook, stirring, for 1 min. Add the orzo and saute for 1 min.
- Add the cream, canned tomatoes and 3/4 cup water. Season with salt, pepper and a pinch of sugar and bring to a boil. Reduce heat and simmer for 8-10 mins until the orzo is just tender. Add the artichokes and cherry tomatoes and simmer for 5 mins. Serve hot, garnished with basil.
