Thai Chicken Salad
- 3 medium tomatoes quartered
- 1 red bell pepper small, thinly sliced
- 1 red chili fresh long, thinly sliced
- 1 green chili fresh long, thinly sliced
- 1/4 cup fresh flat leaf parsley chopped
- 2 tablespoons fresh mint shredded
- 2 tablespoons fresh cilantro chopped
- 1 inch fresh ginger peeled, cut into matchsticks
- 1 pound chicken breast smoked, shredded
- 1 clove garlic minced
- 1 tablespoon sesame oil
- 1 tablespoon fish sauce
- lime wedges to serve
- Combine tomatoes, pepper, chilies, herbs and ginger. Add chicken. Whisk together garlic, sesame oil and fish sauce then toss with salad. Distribute between shallow serving bowls. Serve with lime wedges.
