Linguini White Bean Pasta
- 8 ounces linguini cooked according to package instructions
- 1 red pepper diced
- 1/2 onion medium, chopped
- 1 tablespoon olive oil
- 2 garlic cloves minced
- 1 1/2 cups vegetable broth
- 15 ounces white beans drained and rinsed
- 3 tablespoons chopped parsley
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- grated Parmesan
- In large skillet on medium heat, add oil, onions and pepper cook for 4 minutes
- Add garlic and cook additional 1 minute
- Add broth, beans and parsley and cook until heated through.
- Crush about half of the beans with a potato masher or similar tool and stir to thicken broth.
- Add cooked pasta and toss to combine.
- Serve with grated cheese and parsley garnish.
