Linguini White Bean Pasta

  1. In large skillet on medium heat, add oil, onions and pepper cook for 4 minutes
  2. Add garlic and cook additional 1 minute
  3. Add broth, beans and parsley and cook until heated through.
  4. Crush about half of the beans with a potato masher or similar tool and stir to thicken broth.
  5. Add cooked pasta and toss to combine.
  6. Serve with grated cheese and parsley garnish.
