Pomegranate & Broken Wheat Salad With Mint-Ginger Dressing

  1. Cook the broken wheat as per package instructions.
  2. This is how I cook broken wheat (dalia): Put 4 tbsp of broken wheat with about 5-7 tbsp of water in a microwave safe bowl and cook on microwave high for 4 minutes.Once slightly cooled, fluff using a fork. Let the dalia cool down to room temperature.
  3. In the jar of the blender, tip in the mint leaves ,and green chilli if using and blend it to a smooth paste using 1 tbsp of water or more if required
  4. Transfer the paste to a small bowl and add the lemon juice,grated ginger,lemon zest,black salt, brown sugar, black pepper and salt to taste.Whisk everything well to combine.Keep aside.
  5. Before serving: Mix the cooked broken wheat and all the fruits together and drizzle with the dressing.
