Pomegranate & Broken Wheat Salad With Mint-Ginger Dressing
- 1 1/2 cups pomegranate seeds fresh
- 4 tablespoons wheat medium size broken, dalia
- 1/2 cup fresh pineapple diced you can use store-bought frozen too
- 1/2 cup cucumbers diced
- 5 fresh mint leaves
- 1 green chilli optional
- 1/2 fresh ginger shoot, finely grated
- 1/2 teaspoon lemon zest fresh
- 1/2 teaspoon brown sugar
- 2 teaspoons fresh lemon juice
- 1/2 teaspoon black salt available in Indian grocery stores
- salt to taste
- crushed black pepper
- Cook the broken wheat as per package instructions.
- This is how I cook broken wheat (dalia): Put 4 tbsp of broken wheat with about 5-7 tbsp of water in a microwave safe bowl and cook on microwave high for 4 minutes.Once slightly cooled, fluff using a fork. Let the dalia cool down to room temperature.
- In the jar of the blender, tip in the mint leaves ,and green chilli if using and blend it to a smooth paste using 1 tbsp of water or more if required
- Transfer the paste to a small bowl and add the lemon juice,grated ginger,lemon zest,black salt, brown sugar, black pepper and salt to taste.Whisk everything well to combine.Keep aside.
- Before serving: Mix the cooked broken wheat and all the fruits together and drizzle with the dressing.
