Tomato And Chicken Soup
- 4 tomatoes small ripe, cut in half
- 1/4 onion coarsely chopped
- 2 cloves garlic
- 1/2 cup tomato puree
- 1 cup water
- chipotle chili to taste
- salt
- ground black pepper
- 1 chicken breast cooked and diced
- parsley chopped
- In a saucepan, add the tomatoes and the onion and place over high heat. Cover the saucepan, stir occasionally, and roast until slightly burnt all over.
- Add the garlic and cook for 2 more minutes.
- Add the ingredients to the blender, and also add the tomato puree, water, chipotle, and salt and pepper to taste. Puree until smooth.
- Strain the sauce directly over the saucepan where the tomatoes were cooked and add the chicken. Boil for 5 minutes.
- Sprinkle parsley on top and serve.
