Tomato And Chicken Soup

  1. In a saucepan, add the tomatoes and the onion and place over high heat. Cover the saucepan, stir occasionally, and roast until slightly burnt all over.
  2. Add the garlic and cook for 2 more minutes.
  3. Add the ingredients to the blender, and also add the tomato puree, water, chipotle, and salt and pepper to taste. Puree until smooth.
  4. Strain the sauce directly over the saucepan where the tomatoes were cooked and add the chicken. Boil for 5 minutes.
  5. Sprinkle parsley on top and serve.
