Crab And Soba Noodle Salad With Ginger Miso Dressing
- 10 ounces soba noodles
- 1 cucumber small, seeded, thinly sliced
- 1 red onion small, finely chopped
- 1 medium carrot peeled, cut into matchsticks
- 2 ounces baby spinach thinly sliced
- 1 pound crab meat fresh
- dressing Ginger Miso
- 2 inches fresh ginger peeled, coarsely chopped
- 2 tablespoons pickled ginger plus 1 tbsp to garnish
- 2 cloves garlic peeled
- 3 1/2 ounces miso paste yellow
- 1/2 teaspoon wasabi paste
- 1/2 cup rice vinegar
- 1/2 cup vegetable oil
- Cook noodles in boiling salted water until just tender. Drain then rinse under cold water. Drain again then toss with cucumber, onion, carrot and spinach. Add 1/2 the crab. Set aside.
- For the ginger miso dressing, combine all ingredients with 2 tbsp water in a blender. Puree. Add 1/2 to salad and toss to combine.
- Distribute salad between serving plates and top with remaining crab and dressing. Garnish with pickled ginger. Serve.
