Asparagus Parmigiano
- 1 1/2 lb. fresh asparagus or 2 pkg. frozen asparagus, cooked
- 1 onion, chopped
- 1 garlic clove, minced
- 3 Tbsp. olive oil
- 1 tsp. salt
- 1/4 tsp. hot pepper sauce
- 1 (1 lb.) can tomatoes
- 1/4 tsp. thyme
- 1 (8 oz.) can tomato sauce
- 4 oz. Mozzarella cheese, thinly sliced
- 2 Tbsp. grated Parmesan cheese
- Drain cooked asparagus and arrange in a shallow baking dish. Saute onion and garlic in oil until golden.
- Add salt, hot pepper sauce and tomatoes.
- Simmer, uncovered, for 10 minutes.
- Add thyme and tomato sauce; simmer 20 minutes longer.
- Pour sauce over asparagus.
- Place slices of Mozzarella cheese over top.
- Sprinkle with Parmesan cheese.
- Bake in oven at 350u0b0 for 30 minutes.
- Bake in oven at 350u0b0 for 30 minutes.
- Makes 6 to 8 servings.
