Vegetarian Spaghetti Sauce
- 3 Tbsp. olive oil
- 1 onion
- 1 green pepper
- 1/2 c. diced celery
- 16 oz. tomatoes with juice
- 18 oz. chopped water chestnuts
- 4 oz. mushrooms, sliced
- 1/4 c. chopped parsley
- 2 tsp. honey
- 8 oz. tomato sauce
- 1/8 tsp. soda
- 1/2 tsp. nutmeg
- 1/2 tsp. allspice
- 1/2 tsp. garlic powder
- 2 tsp. wine vinegar
- 3 small bay leaves
- 2 tsp. hot sauce (optional)
- In large iron skillet, on low heat, add oil, onion, pepper and celery.
- Fry gently until onion turns.
- Add tomatoes and blend in other ingredients.
- Cover and simmer 50 to 60 minutes.
- Continue to simmer to thicken or use 1 teaspoon flour and water.
