Roast Chicken And French Fries
- 3 1/2 pounds chicken
- 4 tablespoons sunflower oil
- 1 teaspoon sweet paprika
- 6 1/3 cups vegetable oil for frying
- 2 1/4 pounds potatoes floury, cut into chips
- 7/8 cup whipping cream
- 1 lemon
- 1 pinch caster sugar
- 1 lettuce sliced
- 2 tablespoons fresh chives snipped
- 1 pinch sea salt flakes
- Preheat the oven to 400u0b0F. Use poultry scissors to cut the chicken into portions. Mix the oil and paprika together and season. Rub the mixture all over the chicken. Place the chicken in a roasting pan. Roast for 1 hour, adding any remaining oil dressing half way through.
- Heat the oil in a large saucepan to 325u0b0F. Add the potatoes in small batches and fry for 5-6 mins until crisp and cooked through. Drain on paper towels.
- Mix the cream, lemon juice and sugar together then season. Divide the lettuce and chives between 4 side bowls and drizzle with the dressing. Divide the chicken and fries between 4 plates and sprinkle with sea salt. Serve.
