Ginger Carrot Soup
- 1 1/2 cups vegetable broth
- 2 cups carrots peeled and roughly chopped
- 1/4 green apples medium, cored and chopped
- 1/8 cup cilantro leaves firmly packed
- 1/2 avocado small, peeled and pitted
- 1/2 tablespoon shallots finely chopped
- 1/2 teaspoon minced ginger
- 1/2 clove garlic
- 1/4 teaspoon salt natural, plus more to taste
- 1 pinch ground turmeric
- 1 pinch cayenne pepper
- 1/2 teaspoon fresh lemon juice plus more to taste
- Place all your ingredients except the lemon juice in the blender jar of the KitchenAid(R) Pro Line(R) Series Blender. Secure the lid and set the Blender to the Adapti-BlendTM Soup program. Blend until machine turns itself off. Alternatively, blend for about 5 minutes, starting on speed 1 and gradually increasing to speed 10.
- Soup will come out of the Blender hot. Stir in the lemon juice and serve immediately.
