Applesauce Fruitcake
- 3 cups applesauce
- 2-lb. mixed candied fruit
- 1 med. jar cherries
- 1 lb. dates
- 2-1/2 cups raisins (1 box)
- 2 blocks margarine
- 2 eggs
- 2-3/4 cups flour (all-purpose)
- 2 cups sugar
- 2 tsp. cinnamon
- 1 tsp. cloves
- 1 tsp. salt
- 2 tsp. soda
- 1 lb. chopped pecans
- 3/4 cup flour (to dredge fruit in)
- Cream butter and sugar; add eggs.
- Mix spices with flour and sift; add to creamed mixture.
- Heat applesauce; add to batter. Dredge fruits and nuts in 3/4 cup flour and add fruits to batter and mix well.
- Grease 4 large loaf pans; place waxed paper in bottom.
- Divide batter in pans and bake at 325 degrees about 1 hour and 15 minutes or until done.
- Makes 4 large loaf cakes (2-lb) or 8 small gift-size cakes (1-lb.).
