Wheat And Mushroom Soup
- 1 tablespoon olive oil
- 1 onion diced
- 3 cloves garlic
- 9/16 pound cremini mushrooms sliced, may substitute button or baby bella mushrooms
- 1 zucchini diced
- 1 tomato diced
- 2 1/8 cups chicken broth
- 2 1/8 cups water
- 1/2 cup cracked wheat
- salt and pepper
- 1 tablespoon thyme minced
- Saute the onion and garlic in olive oil in a pan on medium heat (approximately 3 minutes). Add the mushrooms and zucchini, stir. Lower the heat and cover the pan, let cook for 5 minutes to release the juices.
- Add the rest of the ingredients except for the thyme in listed order.
- Increase the heat. Lower the heat once it reaches a boil and let cook for 10-12 minutes, uncovered, until the wheat expands.
- Add the thyme and cook for one more minute.
- Serve with whole grain bread and butter.
