Wheat And Mushroom Soup

  1. Saute the onion and garlic in olive oil in a pan on medium heat (approximately 3 minutes). Add the mushrooms and zucchini, stir. Lower the heat and cover the pan, let cook for 5 minutes to release the juices.
  2. Add the rest of the ingredients except for the thyme in listed order.
  3. Increase the heat. Lower the heat once it reaches a boil and let cook for 10-12 minutes, uncovered, until the wheat expands.
  4. Add the thyme and cook for one more minute.
  5. Serve with whole grain bread and butter.
