Grilled Sirloin With Stuffed Peppers
- 9 ounces feta crumbled
- 7 ounces cream cheese
- 4 1/2 ounces sun dried tomatoes drained and diced
- 1/3 cup basil
- 3 leaves
- 10 Anaheim peppers tops sliced off, deseeded
- 10 sirloin steaks about 9 oz each
- 3 tablespoons butter
- 4 1/2 ounces white bread cut into cubes
- 2 tablespoons oil
- 2 onions peeled and finely diced
- 1 tablespoon brown sugar
- 1/3 cup thyme leaves stripped from stems and finely chopped
- 5 ounces pitted green olives sliced
- 5 ounces pitted black olives sliced
- Preheat the grill. In a bowl, mix the feta, cream cheese, tomatoes and basil and season to taste. Spoon into the peppers and cover the openings with foil. Grill for 10-12 mins, turning, until browned.
- Season the steaks and grill for 6-8 mins, turning, until cooked to desired doneness.
- Melt the butter in a frying pan and fry the bread cubes until golden brown all over. Transfer to a bowl. Add the oil to the hot pan and saute the onions until softened. Sprinkle with the sugar and cook until lightly caramelized. Add the thyme and olives and warm through. Remove from heat, season to taste and stir in the croutons.
- Season the steaks and sprinkle with the olive mixture. Serve with the stuffed peppers, garnished with the reserved basil.
