Jump Up Chocolate Chicken
- 2 slices boneless, skinless chicken breasts sliced thinly
- 1 tablespoon canola oil
- 1 whole red onion cut into wedges
- 1 whole red pepper De-seeded and cut into wedges
- 2 cloves garlic chopped
- 1 whole hot chili finely chopped
- 3/4 cup apple juice
- 1 tablespoon cornstarch
- 10 chocolate Xocai Healthy, Omega Squares, chopped
- 3 tablespoons chopped cilantro optional
- 1 dash salt
- 1 dash freshly ground pepper

- Season chicken with salt and pepper.
- In a heavy pan or wok heat the oil over medium/high heat.
- When oil is smoking add the chicken and let cook without touching for one minute.
- Add red onion, red pepper, garlic and chili and mix together.
- Let cook, stirring occasionally, for 3 minutes.
- In a small container, mix the apple juice and cornstarch until smooth and pour over chicken.
- Bring to a boil, turn off the heat and stir in grated "Xocai Omega Squares"- stir until chocolate is melted and serve.
- Garnish with chopped cilantro.
- Serves 2
