Mexican Casserole
- 1 box chicken flavored Rice-A-Roni
- 1 medium onion, chopped
- 4 medium jalapeno peppers, chopped
- 2 chicken bouillon cubes, crushed
- 1/4 tsp. garlic powder
- 1/2 c. salsa (medium or hot)
- Prepare Rice-A-Roni as package directs to the point of adding the water.
- After adding water, add onion, peppers, salsa, bouillon and garlic powder.
- Mix well.
- Cook as package directs. Meanwhile, brown 1 pound ground beef; season to taste with salt, pepper and garlic powder.
- Drain.
- Add 1 can red beans (drained) and 1 can whole kernel corn (drained).
- Stir to mix and simmer 5 minutes.
- When rice is done, mix meat mixture and rice together. Break tortilla chips in bite-sized pieces to make 2 cups.
- Gently fold in rice mixture.
- Sprinkle top of casserole with one cup shredded Cheddar cheese.
- Place in oven for 10 to 15 minutes or until cheese is melted.
- Serve hot.
