Zesty Chicken With Chickpea And Goat Cheese Salad
- 2 tablespoons vegetable oil
- 4 chicken breasts
- 14 ounces chickpeas cans, rinsed and drained
- 7 ounces cherry tomatoes halved
- 1 red onion peeled and finely chopped
- 1 3/4 ounces cilantro leaves picked and chopped, about 1 1/4 cups
- 1/2 cup lime juice
- 2 tablespoons brown sugar
- 1 green chili deseeded and finely chopped
- 5 tablespoons olive oil
- 5 ounces goat cheese crumbled
- lime wedges to garnish
- Heat the vegetable oil in a frying pan, add the chicken and fry for 10-12 mins, turning occasionally. Remove from the pan and allow to rest for two mins, then cut into slices.
- Place the chickpeas in a bowl with the tomatoes and mix well. Set aside.
- For the dressing: mix the onion, cilantro, lime juice, sugar, chili and olive oil. Season to taste. Add half the dressing to the chickpea mixture and top with goat cheese.
- Drizzle the remaining dressing over the chicken. Serve with the chickpea salad and garnish with lime wedges.
