Lebanese Tuna Salad
- 2 whole wheat pita bread
- 1 tablespoon vegetable oil
- 12 ounces tuna packed in oil drained and flaked
- 14 ounces chickpeas drained and rinsed
- 9 ounces cherry tomatoes halved
- 1 cucumber small, chopped
- 1/2 red onion small, thinly sliced
- 1/4 cup mint chopped
- 1/4 cup chopped parsley
- 1 lemon peel grated and lemon juiced
- lemon wedges to serve
- Preheat the oven to 350u0b0F. Brush both sides of bread with a little of the oil. Place bread on a baking pan. Bake 5 mins each side, or until golden and crisp. Set aside to cool.
- Mix tuna, chickpeas, tomatoes, cucumber, onion, mint, parsley and lemon peel in a large bowl. Whisk lemon juice and remaining oil in a small bowl. Season. Drizzle over salad. Toss to combine.
- Break bread into pieces. Add to salad; toss to combine. Serve with lemon wedges.
