Vegan German Potato Salad
- 6 cups new potatoes quartered
- 1 bunch fresh dill minced
- 1 apple finely chopped
- 1 green onion chopped
- 1/2 cup cocktail onions
- 1/2 cup dill pickles minced
- 1/2 cup carrots finely chopped
- 1 lemon
- 3 tablespoons dijon mustard
- 3 tablespoons olive oil
- 1 tablespoon maple syrup
- 1/2 tablespoon apple cider vinegar
- salt
- pepper
- Cooked new potatoes until just tender. Drain and put it into large bowl large enough for all ingredients.
- Cut all herbs and vegetables and add to potatoes.
- Grate the zest of the lemon and add to to potatoes, then juice the lemon as the first part of the dressing ingredients in next step.
- Whisk together dressing ingredients; adjust sweetness / vinegarness by adjusting quantities of oil, maple syrup, and apple cider vinegar.
- Pour dressing over potato mixture and mix to coat evenly and adjust salt and pepper to taste.
