Mustard Chicken
- 4 chicken leg pieces
- 3 tablespoons butter melted
- 1 tablespoon dijon mustard
- 3 tablespoons olive oil
- 1 tablespoon honey
- 2 cloves garlic crushed
- 2 parsnips thinly sliced
- 1 tablespoon maple syrup
- salad spinach, to serve
- Preheat oven to 400u0b0F. Line a baking dish with foil or baking paper.
- Arrange chicken pieces in a single layer in prepared dish.
- In a bowl, combine butter, mustard, 1 tablespoon olive oil, honey and garlic. Brush liberally over chicken.
- Bake chicken 25-30 minutes, turning once, until cooked through.
- Meanwhile, in a bowl, toss together parsnips, remaining olive oil and maple syrup. Cook in a frying pan over low heat 10-15 minutes, until parsnips are golden and tender.
- Serve chicken with parsnips and spinach salad.
