Beer-Battered Onion Rings, Chicken, And Mushrooms With Imperial Garlic And Walnut Sauce
- 2 cups all purpose flour
- 3 1/2 teaspoons salt divided
- 2 teaspoons ground black pepper divided
- 1 cup cornstarch
- 1/2 teaspoon granulated garlic
- 1/4 teaspoon white pepper
- 3 tablespoons ranch dressing Five-Spice
- 1/2 teaspoon baking soda
- 1/4 teaspoon powdered ginger
- 1/2 cup dark sesame oil
- 1 1/2 cups beer
- 1 1/2 cups lemon juice
- 1/2 pound crimini mushrooms medium
- 3 pounds chicken on the bone, rinsed well and dried
- 1 onion large

- In a quart mixing bowl, whip together flour, 11/2 teaspoons salt, 1 teaspoon black pepper, and next 6 ingredients. Slowly add the oil, beer, and juice; whip mixture until slightly thicker than pancake batter.
- Wash mushrooms and dry thoroughly.
- Using the remaining salt and pepper, season the chicken with an even layer of spice
- Slice the onion into 1/4 inch rings
- Immerse vegetables and chicken into batter and marinate in a cool or cold place at least overnight -- turning the meat and vegetables and spooning the batter over them occasionally.
- Grill meat and vegetables on very hot grill for 5 minutes per side; immerse them again in cold batter and carefully drop vegetables and meat into hot fat (365u0b0 to 400u0b0F). Use a large cast iron Dutch oven or home deep fryer. Cook 2-3 minutes or until golden brown, turning vegetables over once. Using a dry slotted spoon, remove from fat and drain on a paper towel.
- Arrange meat and vegetables on serving platter. :Pour a bit of Imperial Garlic-Walnut Sauce over them and serve.
